Cranberry Pistachio Cookies


With Christmas just around the corner I start thinking of Christmas cookies. This is a recipe I saw on Pinterest and just had to try. It comes from The Girl Who Ate Everything  and they are really very good. My picture doesn't do the cookies justice, they are much greener than the picture shows and the cranberries are much redder. (No photography definitely isn't my strong point, but I figure any picture to give you an idea of what the recipe looks like is better than none - I'm right - right???) This is a cookie you can be proud to give as a gift or serve at a holiday get-together.

Ingredients:
  • 1 pouch Betty Crocker Sugar Cookie Mix
  • 1 box (4 serving size) pistachio pudding mix
  • 1/4 cup flour
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 cup cry roasted pistachios, chopped
  • 1/2 to 1 cup dried cranberries, chopped
Directions:

Preheat oven to 350 degrees.

In a large bowl stir cookie mix, pudding and flour. Add melted butter and eggs and stir to mix well. Add pistachios and cranberries and mix well again.

Drop by rounded spoonfuls onto parchment lined cookie sheets. Press slightly with finger to flatten a little.

Bake 8 - 10 minutes. Do not overbake. They will not look done but take them out and let them sit on the pan for about 2 minutes. Move to wire rack and cool. About 2 or 3 dozen cookies, depending on the size you make them.
