2 Ingredient Angel Food and Fruit Cake
This recipe is super easy to make and can be made with lots of different flavors. I made mine with cherry pie filling and it turned out delicious. It can also be made with crushed pineapple or with any flavor of pie filling that you like. As I said it's super easy to make, just pour the 1 step angel food cake mix into a bowl, dump in the pie filling, stir together and pour into the pan. It took me about 3 minutes to mix it up. It does sink some when taken out of the oven, so don't let that panic you. It makes a super moist, flavorful cake, though not with a normal angel food cake look. This will definitely go on my make in a hurry for unexpected quests list! I hope that you decide to give it a try and let me know what you think!

Strawberry Cake
This weekend we had a family get-together and I was looking for something different to make for a dessert when I came across this recipe for strawberry cake. I usually make chocolate desserts for my family as anything chocolate always seems to be their favorite, but I wanted something different this time. This strawberry cake was a good choice and got thumbs up from everyone! Of course, they did mention that they would be ready for chocolate again next time!!
This recipe does start with a white cake mix but I was very pleased that the finished product did not taste in the least like a "cake mix" and was super moist and had a really strong good strawberry flavor without being overly sweet. I used frozen sweetened strawberries but I'm sure it would be delicious with fresh strawberries. I used a pudding mix and whipped topping for the frosting rather than a powdered sugar frosting and topped that with whole strawberries to decorate. I am including directions for my topping. This recipe will, for sure, go on my "make again" list.

Cinnamon Streusel Cupcakes
Cupcakes are really popular now, and no wonder, they are so convenient to serve and eat, easy to transport for picnics and get togethers and you can make them in about any flavor. These cupcakes are like a cinnamon streusel coffecake. I topped them with a little cream cheese frosting though they are really good with no frosting at all. Yum-Yum! The brown sugar and cinnamon streusel is layered in the center of the cupcake and sprinkled over the top. Hope you enjoy them as much as I have!

Tunnel of Fudge Bundt Cake
I hadn't made this recipe for years but it was my Dad's 90th birthday today and he loves chocolate so when I was looking through my recipes to find one to make for him, I came across this one and decided to give it a try again. I'm really glad that I did. The cake turns out really pretty and the fudge center makes a nice surprise and a nice rich taste. The chocolate glaze that I use to drizzle over the top is easy to make and gives the cake a final touch. Dad and the family gave it a big thumbs up!

Sky Winds Papaw Cake
In 1976 my family, husband and kids, moved to Arkansas to a farm way back on a graveled road - we loved it! We had many adjustments to make, having lived in the city in Nebraska prior to our move (bugs for one!). One of the things I kept hearing about and found growing on our farm were papaws. I, of course, had heard the saying "down in the papaw patch" but didn't have a clue what a papaw was or what in the world you did with them! Never could get the kids to eat them, and really couldn't blame them. Today I found this recipe in the Hill N' Holler cookbook put out by the Madison County Arkansas Extension Homemakers Club in 1977 - sure wish though that I had seen this recipe back then. I sure would have tried it! I hope someone will let me know if they have ever made this type of cake or if they try this recipe - papaws aren't available here in Idaho so I won't be trying it myself, but I'm really curious how it would be.

Zucchini Cake
This is another recipe from my Mom's Hill N' Holler recipe book published by the Madison County Extension Club in Arkansas in 1977. Since zucchini is so prolific in gardens I found this recipe interesting and plan to give it a try when I start getting over run with squash. If you try it I would love to hear your comments!

Pina Colada Cake
Spring feels like it's just around the corner now - and I for one am delighted! I love spring, it's my favorite time of year when things start greening up, the weather turns nicer and everyone can't wait to get outside again. Pina Colada cake is one of my favorite spring cakes because it is light and moist and for some reason makes me think of Easter, which is also just around the corner. I've seen lots of Pina Colada cake recipes on the internet but none quite like this one I received from a friend in Texas years ago. I hope you like it too!

Pineapple Upside Down Cake
One of my favorite cakes is pineapple upside down cake. Not only are they delicious but they are also easy to make and look great. This recipe can be made in a cast iron skillet, in a 13"x9" baking dish or as a layer cake with 2 layers, so it's very versatile and makes a very moist cake. I generally make mine in a 13"x9" baking pan so I will put those directions first and then the other recipes following so don't let the long directions bother you - it's not difficult to make and the flavor is well worth it. The coconut and pecans are not something you see in many pineapple upside down cake recipes but it really gives that little something extra to the cake!

Easy Just-Dump-It-In Cake
Time is, for many people, at a premium anymore. When you work, have a family to care for, have kids to run to activities, there just isn't always time for baking the way our grandmothers did. This is a delicious cake recipe that requires only a few minutes to put together and has almost no time consuming clean-up. My mother used to throw this cake together when people would show up unexpectedly, because in our home, when people stopped by, food was always offered. Next time you need to throw a desert together on short notice with almost no clean-up I hope you give this cake a try. I think you will really enjoy it's flavor as well as the ease.
Ingredients:
Preheat oven to 350 degrees. Grease or spray with cooking spray a 9 x 13 inch pan. Pour pie filling into pan and then pour crushed pineapple over the pie filling. Sprinkle dry cake mix over the pineapple. Pour melted butter over the top of the cake mix. Top with coconut and then with chopped pecans.
Bake at 350 degrees for approximately 50 minutes. Can be served warm or after cooled. Top with whipped topping if desired.

- 1 yellow cake mix
- 2 sticks of butter (1/2 lb.) - melted
- 1 cup coconut
- 1 cup chopped pecans
