Quick Coconut Custard Pie
Another recipe from the Hill N' Holler, Madision County Arkansas Extension Club cookbook. Let me tell you, my list of recipes I "want to try sometime soon" is really getting long! Hope you all can help me out and let me know if you try any of these and what your thoughts are - then I'll move it up the list if you like it or move it down if you don't! This recipe went on the list because I love custard, coconut and quick...

Banana Pie Squares
I have always loved banana pudding and banana cream pie. This recipe is a combination of both and one of my favorites. Of course, it has cream cheese in it and in my book cream cheese makes just about anything better! These squares have a vanilla wafer crust, a layer of cream cheese, a layer of bananas and a layer of pudding and is topped with whipped topping. It's yummy and easy to make. I make mine in a 11"x7" baking dish but it can be made in a 13"x9" by increasing the ingredients slightly and I will also list the ingredients for the larger size. Unfortunately since I live alone, if I make the larger size I will eat the larger size, and then first thing I know I'm the larger size. If you love bananas and cream cheese I hope you find this recipe a winner - I DO!

Blueberry Banana Cream Pie
I have been making this pie for years and it's always a hit! The combination of banana and blueberry flavors along with cream cheese makes an extremely tasty pie. I've seen it on many sites but most often those recipes are made with whipped topping. I still make mine with Dream Whip and I think it makes a much tastier pie.
I didn't have a picture of it so this picture is borrowed from Taste of Home. I decorate the top of mine with some of the Dream Whip and cream cheese mixture, but it looks good with the bananas on top also. If you are like me a picture sometimes makes a difference in whether I try a recipe or not.
I hope you try this one - it is definitely a keeper!
Ingredients:
Cream together the cream cheese and sugar until light and fluffy.
Prepare Dream Whip according to package directions. When whipped to peaks fold in the cream cheese mixture.
Slice bananas and place half in each pie crust. Set aside about 1/2 cup of Dream Whip mixture. Top bananas with the Dream Whip and cream cheese mixture, half in each pie crust. Spoon half of the blueberry pie filling over each pie and decorate top of pie with set aside Dream Whip mixture. Refrigerate to chill.
Enjoy!!
