Tostado Casserole


I love Mexican food, real Mexican food and Americanized Mexican food, so when I'm in a hurry for something fast and easy I tend to think of things like tacos, or Mexican style casseroles. This recipe is a fast and easy casserole. This basic recipe can be spiced up with salsa, onions or peppers as you prefer.

Ingredients:
  • 1 pound hamburger
  • 1 (15 oz.) can refried beans
  • 2 1/2 cups corn chips
  • 3 tablespoons taco seasoning
  • 1 (15 oz.) can tomato sauce
  • 1/2 cup shredded cheese
  • shredded lettuce, green onions and sour cream

Directions:

In skillet brown hamburger. Add 1 1/2 cups of the tomato sauce and the taco seasoning. Stir to mix well. Line bottom of an 11x7 inch pan with 2 cups of the corn chip and top with the seasoned hamburger. Combine remaining tomato sauce and refried beans, spreading over the ground beef. Bake at 375 degrees for 25 minutes or until mixture is headed through. Sprinkle remaining corn chips and cheese over casserole and heat an additional 5 minutes until cheese is melted. Garnish with shredded lettuce, green onions and sour cream.
