Chalupas

I found this recipe at Recipe Girl which has now become one of my favorite recipe sites. She has tons of recipes listed and all of them look so good I don't know where to start on trying them. These looked very simple and like they would work really well with homemade flour tortillas, and sometimes, especially during the summer, I just want something really quick and easy to make but that still tastes delicious. These qualify on all levels! You can get as fancy as you want with the toppings or eat them with just a little salsa and sour cream and either way they are quick, easy and taste wonderful!

Ingredients:
  • Non-stick cooking spray
  • 8 (6 inch) flour tortillas
  • 2 cups refried beans
  • 2 cups shredded Monterey Jack and Cheddar cheese blend
  • 1 cup fresh (or your favorite jar) salsa
  • 1 cup sour cream
  • 2 cups finely chopped lettuce (optional)
  • 1 cup guacamole (optional)
  • Sliced black olives, green onions, ect. (optional) Basically whatever you like on taco salads will work.
Directions:

Preheat broiler. Spray a baking sheet with non-stick cooking spray. Place 4 tortillas on baking sheet and heat on center rack in oven for 4 minutes.

Remove baking sheet from oven and turn over tortillas. Spread each tortilla with 1/4 cup refried beans and top with 1/4 cup cheese. Bake until cheese is hot and bubbling and the tortillas are crisp - 5 to 7 more minutes. Repeat with remaining tortillas.

Serve immediately, topping each tortilla with salsa, sour cream and any additional toppings desired.
