This is a great recipe from the Betty Crocker site made with sugar cookie mix. I was in a hurry when I needed to make up a batch of cookies and since I had a pouch of the mix I decided to give these a try. I plan on making some soon from scratch with my sugar cookie recipe and basically rolled up and sliced the same way - not that these are bad, they are actually very tasty. I just prefer to have things made from scratch. This dough was not hard to work with and rolled out easily and rolled into a log with only a couple of very small cracks. After chilling they sliced up nicely and baked up looking pretty. They also taste great - so what more could you ask for???? They are definitely worth trying since the idea of them is different and will get positive comments, plus who doesn't like the taste of cinnamon rolls?
Ingredients:
- 1 pouch Betty Crocker Sugar Cookie Mix
- 1/2 cup butter, softened
- 1/4 cup flour
- 1 egg
- 1 tablespoon butter, melted
- 1/4 cup sugar
- 1 tablespoon cinnamon
Directions:
Stir cookie mix, softened butter, flour and egg until dough forms. On lightly floured surface roll dough to about 1/4 inch thickness. Brush with melted butter.
Combine sugar and cinnamon and sprinkle evenly over dough. Roll up dough jelly roll fashion, starting at long side. Wrap roll in plastic wrap. Freeze 30 minutes or until firm.
Heat oven to 375 degrees. Cut dough into 3/4 inch slices. On ungreased cookie sheet or on parchment lined cookie sheet place slices 2 inches apart. Bake 11 - 12 minutes or until edges are light golden brown. (I baked mine at 350 degrees for 9 minutes and they came out great) Cool 2 minutes and then move to cooling racks. Drizzle or frost with the following:
- 3/4 cup powdered sugar
- 1 tablespoon milk
Mix powdered sugar and milk together well and drizzle over cookies.
Enjoy cinnamon roll flavor in a cookie!
